Savour this exquisite medley of flavours with this Cod with Tomato (The charmer and the chubby) & Roasted Vegetables with Chorizo recipe, perfect for a vibrant and hearty meal. Enjoy fish at its best!


  • 3 to 4 large tomatoes, cut into pieces
  • 2 colored bell peppers
  • 1 large red onion
  • 100 gr of chorizo
  • 1/2 cup of pitted green olives, cut in half
  • 1/4 teaspoon of smoked paprika
  • A few sprigs of fresh oregano
  • 1/4 cup of olive oil
  • 4 portions of fish of choice, skinless
  • Salt and pepper, to taste
  • Serve over rice


  1. Preheat the oven to 400°F (200°C) and place the rack in the center.
  2. Cut the tomatoes, bell peppers, onion, and chorizo into pieces.
  3. Mix the ingredients with the olives, smoked paprika, oregano, and olive oil, season generously, then pour into a large baking dish.
  4. Bake in the oven for 20 to 25 minutes, or until everything is tender.
  5. Add the cod portions, sprinkle with a bit of salt, pepper, and brush with olive oil.
  6. Continue baking for an additional 10 to 15 minutes. Serve over rice.
