Cod with Tomato & Roasted Vegetables with Chorizo

Ingredients
- 3 to 4 large tomatoes, cut into pieces
- 2 colored bell peppers
- 1 large red onion
- 100 gr of chorizo
- 1/2 cup of pitted green olives, cut in half
- 1/4 teaspoon of smoked paprika
- A few sprigs of fresh oregano
- 1/4 cup of olive oil
- 4 portions of fish of choice, skinless
- Salt and pepper, to taste
- Serve over rice
Steps
- Preheat the oven to 400°F (200°C) and place the rack in the center.
- Cut the tomatoes, bell peppers, onion, and chorizo into pieces.
- Mix the ingredients with the olives, smoked paprika, oregano, and olive oil, season generously, then pour into a large baking dish.
- Bake in the oven for 20 to 25 minutes, or until everything is tender.
- Add the cod portions, sprinkle with a bit of salt, pepper, and brush with olive oil.
- Continue baking for an additional 10 to 15 minutes. Serve over rice.
Preservation
