Ingredients

  • 2 black original tomatoes, sliced

For lentil salsa

  • ½ cup cooked lentils, rinsed and drained
  • 2 tbsp feta cheese, crumbled
  • ¼ cup fresh cilantro, finely chopped
  • Juice of ½ lemon
  • 1 tsp za’atar spice
  • 1 tsp honey
  • Fleur de sel and freshly ground pepper, to taste
  • A dash of olive oil

Steps

  1. In a bowl, mix all the lentil salsa ingredients and set aside.
  2. Arrange the tomatoes on a serving plate and top with lentil salsa. Season to taste with fleur de sel and pepper and serve.
