The tomato’s presence in the great majority of culinary cultures throughout the world is unquestionable. With this gorgeous golden tomato salad and crunchy peanuts, we explore the flavours of Asia. A little honey, traditional fish sauce and a pinch of chili powder give this dish a fresh and deep flavour.

Ingredients

  • 1 yellow original tomato, sliced
  • 2 tbsp salted, roasted peanuts, coarsely chopped
  • A bunch fresh basil, coarsely chopped
  • ¼ red onion, finely chopped

For the dressing

  • 3 tbsp olive oil
  • Juice of ½ a lime
  • 1 tsp fish sauce
  • 1 tbsp honey
  • Fleur de sel and freshly ground pepper, to taste
  • A pinch of chili powder

Steps

  1. In a bowl, combine all the vinaigrette ingredients and mix well until blended. Set aside.
  2. In a salad bowl, combine all salad ingredients. Toss with vinaigrette and serve.

Preservation

Eat the same day
