Fresh Tomato Bloody Caesar with Steak Spice Rim

Ingredients
- 2 to 3 Mama tomatoes (about 1 kg)
- ½ cup clam juice
- 2 tbsp lemon juice
- 1 tbsp Worcestershire sauc
- 1 tbsp shallot, finely chopped
- 1 tsp freshly grated horseradish
- A few drops of Tabasco sauce, or more to taste
- Salt and freshly ground black pepper, to taste
- 2 oz vodka, gin, or bourbon (or more, if desired)
- Steak spice, for rimming the glasses
For garnish (optional)
- Lemon wedges
- Celery stalks
- Olives
- Mini pickles
Steps
- Pour the steak spice onto a small plate. Rub a lemon wedge around the rim of each glass, then dip the rims into the steak spice to coat. Fill the glasses with ice and set aside.
- Cut the tomatoes into chunks to yield about 2 cups.
- In a food processor, gently pulse the tomatoes with the clam juice, lemon juice, Worcestershire sauce, shallot, horseradish, and Tabasco until the mixture is liquid but still slightly textured. Season with salt and pepper. Tip: Pulse gently to avoid crushing the tomato seeds, which can make the mixture thicker and add bitterness.
- Strain the tomato mixture through a fine-mesh sieve and set aside.
- Pour your spirit of choice into the prepared glasses, then top with the fresh tomato mixture. Garnish with a celery stalk and any additional garnishes of your choice. Serve immediately.
