Growing our “mamas” in greenhouses during the winter was an extension of our commitment to doing things differently.

But ultimately, we realized that winter greenhouse cultivation comes with its own set of challenges.

In the summer, we implement countless strategies to prevent our tomatoes from suffering due to heat and humidity, always striving to preserve their vital energy to help them grow under optimal conditions.

In winter, we can better control and optimize the conditions. We supplement natural light with adequate lighting, heat efficiently without wasting energy, and adjust irrigation based on the plants’ age and needs. Perfectly managing all these parameters is a constant puzzle and a major challenge.

We never stray far from our greenhouses in winter, as the risks of losing our harvest are much higher due to mechanical breakdowns, technology adjustments, or weather events like freezing rain.

It’s intense; we have to stay highly vigilant and keep a cool head, as the risks are very real.
